The excellent Turkish Airlines is offering a full service return from Dublin from €159 Including meals in the economy cabin.
You can also fly to Istanbul with Air France €172 with an 8hr layover in Paris to see the city in the day.
Or KLM offer flights from Dublin to Istanbul €198 Via Amsterdam with a daytime layover. The train to Amsterdam from Schipol airport is excellent, the station you need to visit Amsterdam is IN the airport, easy and inexpensive. As Amsterdam is usually rather expensive to fly to from Dublin, this fare is my personal favourite.
